Ingredients
2 cups cooked pumpkin
1-11/4 cups nut milk
1/3- 2/3 cup honey or maple syrup
2 large eggs
2 Tbsp. arrowroot powder
1 Tbsp. instant milk powder
2 tsp. organic vaniila extract
1/2 - 1 tsp. cinnamon
1/4 tsp. ginger
Optional: 1 Tbsp molasses
Preparation
Step 1
Blend all ingredients and taste the mixture.
Make any changes according to taste.
The mixture will be somewhat thick, but very pourable.
Lightly oil 1-2 baking diches and pous the mixture into them about 1 1/2 to 2 inches thick.
Bake the pudding at 325F for about 30 to 45 minutes until the mixture becomes firm and turns golden brown.
Chill thoroughly before servings.
